Hillhouse Brasserie, Dubai Hills Golf Course
Hillhouse Brasserie is a chic eatery located at the recently opened Dubai Hills Golf club. Providing a family-friendly daytime vibe it serves up coffees, light meals, and afternoon tea through the day, while by night it transforms into a buzzing, decent-value, brasserie.
The Liquidstate were brought onboard to conceptualise and develop a sustainable, seasonal beverage offering that captured the essence of the venue. In addition, a tailored training and support package was supplied ensuring a successful rollout of the product.
The Duck Hook, Dubai Hills Golf Course
Also located at the Dubai Hills Gold Club, The Duck Hook is an upscale take on the quintessential “19th Hole” pub. With reimagined takes on classic gastropub favourites, the Duck Hook is based upon traditional British country pursuits that will transport us to the Shires of England.
For this project The Liquidstate created a comprehensive beverage program suited to the high volume needs of the outlet, focusing on customised drinks as well as classics and crowd-pleasers with a twist. Using zero-waste techniques with a strong focus on sustainability, a fun and innovative offering was created, receiving hugely positive feedback from Duck Hooks patrons.
The Maine Oyster Bar, Hilton JBR
"The Cocktail menu at The Maine lacked luster and originality when we started. I could picture what I wanted, but didn't have the talent or the creativity to execute a cocktail menu befitting the brand. Angus came in and created a diverse and original menu with a wide range of spirits and garnishes. He streamlined our operations by implementing purchasing, stock management controls and trained the entire team - bringing our down both our beverage cost and increasing our sales of cocktails".

Apex City Hotel: Off The Wall
Off The Wall Restaurant & Bar is among the most popular City of London restaurants for hotel guests and locals alike. Its central location just off London Wall near some of the city's most prominent financial firms gives the space a lively atmosphere each evening. Its intuitively arranged space provides a quiet, refined place for semi-private meetings and private dining occasions by day or on weekends. Most importantly, the restaurant's culinary team provides an array of dishes, ranging from the unexpected to the traditional.
Off the Wall features contemporary design elements, hints of bold color and unique textures. These modern surroundings complement the restaurant's food and drink menus, which include inspired pan-European flavours.
MacDonald Holyrood Hotel
Macdonald Holyrood Hotel in Edinburgh is situated in the city's historic and beautiful old town, just a couple of minutes' walk from the world famous Royal Mile and the Scottish Parliament building. With the increasing footfall in the area the hotel realised they needed to update their offering in order to capture the passing trade. The Liquidstate was commissioned to re-design the bar area, develop new F&B offerings in the hotel bar and restaurant and implement new service standards within the hotel by way of in-depth staff and management training sessions.
Taj Hotels Tamil Nadu
The Liquidstate spent three months in India developing the product offerings for four hotels in the region. The Taj Coromandel, Taj Connemara, Taj Mount Road and Taj Fishermans Cove underwent extensive development updating product listings, menus, operational procedures and comprehensive training sessions allowing them to improve the overall guest experience and position themselves as the best offerings in the region.
